Recipe: Lemon Loaf

Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2-3 tsp grated lemon rind (about 1 large lemon)
- 1/2 cup walnuts, chopped (optional)
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup whole milk
Glaze:
- 1/4 cup sugar
- 2-3 tbsp lemon juice (about 1 large lemon)
Instructions
- Preheat oven to 350F. Grease a heavy 9x5x3 loaf pan.
- In a medium bowl, sift together flour, baking powder and salt. Stir in lemon rind and walnuts (if using) and set aside.
- Using an electric mixer, cream butter in a large bowl. Add sugar and beat until very light and fluffy. Add eggs, beating after each addition until well combined. Add dry ingredients alternately with the milk, making 3 dry and 2 liquid additions, beginning and ending with the dry and stirring lightly just until combined after each addition. Turn into prepared pan.
- Bake for 50-60 minutes, watching carefully after 50 minutes.
- Cool 5 minutes, then drizzle glaze over top.
- Cool completely, and then remove from pan.
Quick Notes
A lovely, tender cake with a little tartness. Don’t make the glaze at the last moment. Stir well and let it sit, and then stir again — this will help the sugar dissolve. Alternatively, heat the sugar and lemon juice in a small saucepan over low heat, stirring constantly, just until the sugar dissolves. Poke holes in the baked loaf with a thin skewer — something I remember my mother doing — which distributes the glaze right through the loaf. I lined my loaf pan with parchment paper overhanging on the ends, just to avoid any problems with sticking.
